Granola is a delicious source of fiber. I make a batch every week or so and always have something quick and good for me at hand for a rushed breakfast. It also makes a terrific TV snack in place of M&Ms or potato chips. Actually, toss some M&Ms in it and you've got a chocolaty nutty treat.

I’ve made an old oatmeal box into a handy granola cereal storage box. This mixture makes a couple of medium boxes or one extra large oatmeal box worth. You can add all sorts of extra goodies – even mix it with your favorite cereal or one of those giant bags of Chex Mix to stretch the recipe or give it some spunk. Me I like nuts and dried fruit.

Cook Time

Yields: 11-13 cups

Ingredients

  • 8 cups Rolled oats
  • 3 cups Fruit & Nut Trail Mix
  • 1 1/2 tsp. Salt
  • 1/2 cup Brown sugar
  • 1 cup Maple syrup & honey, Mixed to whatever proportion you like
  • 1 cup Vegetable oil, Preferably mono-unsaturated like canola or safflower
  • 1 tbsp Ground cinammon
  • 1 tbsp Vanilla Extract, You can also use other flavors
  • To taste Wheat germ, pecans walnuts, dried fruit, sunflower seeds, almonds or half cup peanut butter, Add these ingredients if you like. The more the merrier

Bake slowly

  1. Preheat the oven to 325 degrees F.
  2. Combine all sugar, salt, honey, syrup, oil, cinnamon, vanilla in bowl and bring to a boil
  3. Place oats in large bowl with additional wheat germ or peanut butter (if added). Don’t add dried fruit, nuts or trail mix yet.
  4. Pour hot liquid over oatmeal mixture and stir to coat evenly.
  5. Spread oatmeal mixture evenly over large flat baking sheet. You’ll probably need two baking sheets to cover it all.
  6. Bake 20 minutes, pull the pan out, flip the granola over and cook for 10-15 minutes more till it begins to firm up.
  7. Remove and cool on wax paper on countertop.
  8. When cool, mix in the trail mix and nuts. Stir well and pour into a box or large Ziplock bag to store for hearty breakfasts. This mixture makes a couple of medium or one extra large oatmeal box worth.
